Ingredients
  

  • For the Beef Shoulder Clod Steak:
  • 2-3 lbs. beef shoulder clod steak
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 2 garlic cloves minced
  • 2 cups beef or vegetable broth
  • 1 cup red wine optional
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • Select a dry seasoning mix such as a bouquet garni or Italian seasoning blend (optional)

  • Step 1: Preparing the Beef
    Begin by rinsing the beef under cold water and patting it dry with paper towels.
    If there is an excessive amount of fat, trim it down to about a ¼-inch layer, as the fat will add flavor during cooking.
    Season the meat generously with salt, pepper, and your choice of dry seasoning. Also, rub minced garlic on and around the beef for an aromatic boost.
  • Step 2: Searing the Beef
    Heat a large skillet to medium-high and add one tablespoon of olive oil.
    Once the oil is shimmering, add the seasoned beef. Sear each side for about 3–4 minutes, or until a golden-brown crust forms. While essential for flavor development, you can optionally skip this step if time is of the essence.
  • Step 3: Seasoning
    In a bowl, mix the broth, wine (if using), Worcestershire sauce, and tomato paste until well combined.
    In the slow cooker, create a bed of chopped onions, carrots, and celery.
    Place the seared beef on top of the bed of veggies.
    Pour it over the beef. The liquid should come about halfway up the side of the beef; you may not need all of it, depending on your slow cooker's size.
  • Slow Cooking Process
    Set your slow cooker on low for 8–10 hours or on high for 4-5 hours.
    If possible, turn the beef over halfway through the cooking process; if not, the slow cooker will do a fine job of distributing heat evenly.
    When the meat is fork-tender and shreds easily, it's ready.
