Ingredients

For the Salmon

  • 4 skin-on salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the Asparagus

  • 1 lb fresh asparagus, trimmed
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Lemon-Dill Sauce

  • 1/3 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • 1 clove garlic, minced
  • 2 tbsp fresh lemon juice
  • Zest of 1 lemon
  • Salt and pepper to taste

Step-by-Step Instructions

Step 1: Prep the Ingredients

Start by prepping everything. Pat the salmon dry with paper towels and season both sides generously with salt and pepper. Trim the asparagus by snapping off the tough ends—it’s easier than you think! For the sauce, combine the Greek yogurt, mayonnaise, fresh dill, garlic, lemon juice, and lemon zest in a small bowl. Season with salt and pepper and mix well. Set it in the fridge to chill while you cook.

Step 2: Sear the Salmon

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering (but not smoking), place the salmon fillets skin-side down in the pan. Sear undisturbed for about 4-5 minutes, until the skin turns crispy and golden brown.

Carefully flip the salmon and cook for another 3-4 minutes until the flesh is opaque and flakes easily with a fork. Remove the salmon from the pan and set it aside.

Step 3: Cook the Asparagus

Using the same skillet, add 1 tablespoon of olive oil and minced garlic. Sauté for 30 seconds to release the aroma, then toss in the asparagus. Season with salt and pepper. Cook for 4-5 minutes, stirring occasionally until the asparagus is tender but still bright green.

Step 4: Plate and Serve

Transfer the cooked asparagus to serving plates and top each plate with a perfectly seared salmon fillet. Drizzle the chilled lemon-dill sauce over the salmon, adding a final sprinkle of fresh dill and lemon zest for garnish. Voila! Your masterpiece is ready to serve.

Cooking Tips for Success

Want to nail this recipe every time? Here are some pro tips to help you out:

  1. Get the pan hot enough – A hot pan is key to achieving that golden, crispy sear on your salmon. If the pan isn’t hot enough, your salmon might turn out soggy rather than crispy.
  2. Don’t overcrowd the pan – Sear the salmon in batches if needed. Overcrowding reduces the pan’s temperature, which will prevent a proper sear.
  3. Use fresh ingredients – Fresh dill and lemon juice make a huge difference in the Lemon-Dill Sauce. While dried dill works in a pinch, fresh herbs provide a brighter flavor.
  4. Test the salmon for doneness – To check if the salmon is cooked through, press gently with a fork. The flesh should flake easily but still be moist on the inside.
  5. Don’t overcook the asparagus – Keep the asparagus tender-crisp by not overcooking. Remove from the heat as soon as it turns bright green.
